In this second course, which comprises a total of 15 lessons, the language of wine and tasting techniques are deepened. National and international oenography are on the program (national and international wine-growing regions).

    Tasting technique

    The sensory test: the tasting technique and the AIS terminology. The analytical descriptive table and the points table.

    Wine tasting: Tasting of an aromatic wine, a young red wine of the last vintage and a mature, full-bodied red wine (at least 3-4 years). Use of both tables.

  • Lesson II

    Valle d'Aosta and Piedmont

    The region, wine-growing areas, grape varieties, wines and local gastronomy.

    Practical wine tasting: Tasting of 4 wines from the region.

    Lombardy and Trentino-Alto Adige

    Distribution of the vine and wine in France; wine legislation, production zones, grape varieties and wines of Bordeaux, the Rhône Valley, the Sud-Ouest, Languedoc-Roussillon, Provence and Corsica.

    Practical wine tasting: 4 wines from the production zones covered.

  • Lesson XIII

    Viticulture in France II

    Production zones, grape varieties and wines of Burgundy, Loire, Alsace, Champagne, Savoy and Jura.

    Practical wine tasting: 4 wines from the production zones covered.

  • Lesson XIV

    Viticulture in the world

    Distribution of the vine and wine in the world; growing areas, grape varieties and wines in: California, Chile, South Africa, Australia and New Zealand.

    Practical wine tasting: 4 wines from the regions covered.

  • Lesson XV

    Class work and in-depth tasting

    Written examination and tasting based on the points and analytical scale; joint correction; consolidation of the most important arguments and the tasting technique.
    Tasting of a white wine and a red wine by the participants.

    Guided tasting of a wine of excellent quality using both tasting tables.
